Apex Kosher Catering is a new and emerging company, certified by COR, with a veteran team to back our mission. Being the kosher caterer of choice in 3 to 5 years is a tall order that we are confident we can accomplish through our company values and beliefs. We believe that price shouldn't compromise the quality of food and we thrive on the challenge of exceeding client expectations no matter how big or small.
Roshan completed his formal culinary training in Sri Lanka. He then made his way through some of the world's finest kitchens, such as the five-star Hilton Colombo and the seven-star Hotel Burj Al Arab in Dubai before arriving in North America.
In his career, he has won 8 Gold medals, 1 Silver medal and 1 Bronze medal for his culinary achievements. Additionally, he has won 3 notable Awards, including Most Outstanding Apprentice in Sri Lanka, Most Outstanding Buffet Presentation in Sri Lanka and Most Outstanding Individual Plated Desserts in Toronto.
As Co-Owner and Executive Chef of Applause Catering, Roshan managed to bring the company up to become one of the top Kosher caterers in Toronto at the end of 6 years.
In August of 2016, Roshan and his business partner, Mauricio, founded Ma-Ro Catering, a non-Kosher caterer, in a 5000 square foot kitchen facility.
Chef Roshan's long and extensive career has brought him to launch Apex Catering, the realization of his drive to continue to push the boundaries within the Kosher catering and event industry here in Toronto. He truly believes that Apex Kosher Catering will become one of this city's top Kosher caterers within the next 3-5 years.
Mauricio began his career studying Food & Beverage Hospitality and Culinary Arts at the acclaimed Escuela Mexicana de Turismo in Mexico City. In 1988, Mauricio moved to make Toronto his home, where he worked as a kitchen apprentice under Chef Gilles Roche, attended cooking classes at George Brown College, completed wine courses under David Lawrson and wine seminars by Movenpick Restaurants.
As the Senior Event Manager at The Butler Did It, the largest staffing agency in Canada, Mauricio produced the finest catered events in the city at dozens of Toronto's most respected venues for the nation's elite. His unique skills in planning and leadership led him to join GMB Catering, a best-in-class boutique Kosher caterer, as the Director of Sales. In this position, Mauricio was responsible for small to large scale events for clients such as the United Jewish Appeal Federation (UJA), Friends of Simon Wiesenthal Centre and Ve'ahavta organizations at Synagogues across the city. These events include weddings, engagement parties, and Bar/Bat Mitzvahs.

Jay was born in Calgary, Alberta. After high school, he studied in Yeshiva in Israel for two years. Then Jay attended Yeshiva University in New York, where he worked as a waiter, Mashgiach, youth director and dorm counselor in addition to his studies.
Jay has continued to be involved in community work as a division leader of UJA and the Gabbai in his Synagogue for the past 6 years.
